Tasty Kueh with Veggie Shreds
~Bore with sugary kueh ? This time I use the left over veggies, add bacon crumbles with a quick stir fry plus chewy dough… I never knew that this kueh came out so crunchy and tasty, definitely no regret to try this easy to prepare and very appetizing new creation!
Ingredients:
A : Dough
1: glutinous rice flour 1 cup corn starch 1/4 cup wheat starch 1/4 cup
2: fresh pandan juice 250 ml
3: salt 1 tsp sugar 1/2 tsp corn oil 2 tbsp
B: Fillings
1: shredded.. carrots, onion ,cucumber ,bacon crumbles ( as needed)
2:finely chop 1 clove garlic and 2 shallots
3: finely chop dry shrimps (soak and chop) black fungus (* soak and finely chop )
4: sugar and salt to taste

1: In a large mixing bowl, sieve all flour , add sugar and salt…
2: mix together with pandan juice and oil into a smooth batter..
3: pour the batter into a oiled plate,steam for 10 -12 mins,dish up and set aside.
4: Hot oil hot pan saute dry shrimps and black fungus with garlic and shallots
over medium heat until fragrant…
5: add shredded veggies and quickly stir fry for about 1 minute (ensure for crunchy texture)..
sugar and salt to taste, dish up and set aside
6: after cooling the dough ,put the steamed dough inside a plastic bag, knead and roll until smooth.
7: evenly cut into 6-8 parts,( 40-50 gm ), flatten edges and ready for filling…
8: spoon 1-2 tbsp of veggie mixture into middle of the dough, pinch edges closed.
9: put some oil on your hand and roll the kueh smoothly, flatten the top and mark a
red dot and brush cooking oil as wish, done and serve immediately.
