Cinnamon Grilled Pineapple

Inspired by the delicious grilled pineapple slices at a Brazilian steakhouse in Toronto , this recipe here I am not sure is the exact recipe they use , but I am sure it tastes pity close. This juicy , warm with a sweet caramelized crust pineapple side dish is definitely perfect for garden summer-vibes gatherings .

Ingredients and preparation…

1 - one pineapple , peeled , cored , and cut into even wedges.

2 - 1 teaspoon of ground cinnamon

3 -2 tablespoons of Maple syrup , soft butter each

4 - 1 tablespoon of salt with one full bowl of water , soaking pineapple after peeling

( 5-10 mins ) , drain and set aside.

Steps:

1- preheat an outdoor grill for medium high heat

2- whisk cinnamon , Maple syrup and butter together in a small grass bowl

3- apply the creamy like paste on both sides of each pineapple wedges.. …ready for grill.

4- grill pineapple wedges on the preheated grill until heated through ,

… 4-6 minutes approximately each side.

5- dish up and serve not 😋

Tips.. No outdoor grill , bake or grill it in a regular indoor oven is fine as well

夏曰炎炎,一份材料簡單步驟也是簡單的清爽小吃,只需一點點時間預備,一道酸甜開胃的餐前小菜、朋友小聚清甜佳品⋯試試如何?

材料~


1: 小紅番茄大約25-30

2: 去核甜梅肉8-10

3- 山渣片10-12-片

4-陳皮一小塊、浸軟備用

做法~

1: 小番茄洗淨,以刀尖在番茄上戒十字、然後放入滚水浸十分鐘

2: 倒出蕃茄放入冰水浸大約5-10分鐘,然後小心去皮沖水瀝乾備用

3: 話梅肉、山渣片、陳皮放入小鍋中加入350-400毫升 小火煮沸,熄火浸軟待涼,濾出備用

4: 將去皮小蕃茄和過濾後的山渣梅汁,切絲陳皮放入密封玻璃器皿中冷藏最小6-8小時,不妨過夜味道更加。

5: 冷藏後取出,置於碟上再放上數小塊薄荷葉更可愛😘⋯⋯消署小吃即成。

Cherry tomatoes with preserved plums and hawthorn slices ~

It’s one of my easy summer-vibe salad for bbq gathering , a simple delicious brine goes well with the refreshing cherry tomatoes , definitely a perfect recipe with amazingly aromatic flavor for everyone to enjoy summer vibes , and happy gatherings .

Ingredients ~

Ready to go..😎

1: cherry tomato 30 pieces

2: dried preserved seedless sweet plum 8-10 pieces

3: hawthorn slices 10-12 pieces

4: tangerine peel .. a small piece (soak and clean )

5: water ..350-400 ml

6: no sugar needed here..😝

Steps~

1: wash tomato , clean and cut them with a cross..( for easy peeling)

2: prepare hot boiling water and blanch the tomatoes slightly..5-10 mins

3: quickly soak with icy water , and carefully peel , drain gently and set aside.

4: boil the seedless plum, hawthorn slices and tangerine peel with 350 -400ml water onto a saucepan for 5-10 mins , rest till cool and drain , set aside.

5: put together the peeled tomatoes and the plum syrup onto a sealed container , keep in fridge at least 6-8 hours , overnight is the best option here.

6: take it out from the fridge before serve.

Tips.. dish up with few mint leaves 😎.. my best preference.

Bitter Gourd on Ice with Plum and Hawthorn Sauce

Hot Summer day with a bite of icy plum haw  gourd, definitely a good start for chic chat and party gathering…and it is very limited ingredients used, fun to share to everyone..

Ingredients: 

 1:   2  medium size gourd

 2:   sweet  preserved seedless plum    20 gm        haw flakes   35 gm

Steps:

1:  a-  blanch  sweet preserved plum ,drain and  set aside .

b- add 1 cup of  hot boiling water in a glass bowl, put preserved plum with  haw flakes and soak for 30 mins, then  combine well till smooth as creamy sauce.

 2:  cut bitter gourd into half, remove seeds and set aside.

 3:  Add 1 tbsp of salt and oil into a big pot of boiling water, blanching bitter gourd 3 mins the most…quickly rinse and soak with icy water for 15-20 mins ,drain and set side.

 4: Cut into wedges , place on top of bamboo mat  with ice cubes under.

 5:  A-Dip with  the plum haw sauce or pour sauce  all over the plate,serve and enjoy.

B-Or mix well with the sauce then sit on the ice cubes without the bamboo mat.

 6:  C- put  bitter gourd  with  marinade in a glass bowl inside refrigerator over night ,for better aroma, reserve for  tomorrow.

冰鎭山楂梅汁涼瓜~

山楂片話梅肉味道互相配合,混合的汁液淋在爽口甘味的涼瓜中帶來新鮮的感覺,材料十分簡單制作也輕輕鬆鬆無難度,夏日炎炎降火開胃小食⋯或餐前伴菜又一好撰擇~

材料:

1: 涼瓜兩條 (不大不小、中型光滑光身)

2: 甜話梅肉 20克 ,

3: 山楂片 35 克 (大約大型圓庄一筒)very limited ingredients used.

步驟:

1:話梅肉滾燙水冲一冲,山渣片和話梅肉置於碗中加入熱水浸泡30分鐘,

軟化後拌勻成濃郁汁液、備用。

2: 涼瓜從上至下割半,用匙去內瓤和白衣,沖洗備用

3: 大鍋滾水加入1湯匙鹽和油,加入涼瓜焯3分鐘,快手倒出於

有冰塊的冰水中鎮涼15-20分鐘

4: 取出瀝乾斜切片(厚度不要太薄召則沒有口感)

5: 涼瓜放在冰層竹垫子上,沾山楂梅汁、或淋上即可享用 。

*如喜歡入味更甜可浸入汁液再放入冰箱冷藏2-3小時,~道創意涼菜肯定心曠神怡!

Walnut Salad with Balsamic vinaigrette

This summer garden salad gets upgraded with toasted walnut and I generously sprinkle the most delicious tangy balsamic vinaigrette together , a super easy salad have it ready in 15 minutes , perfect for a simple and nutritious side dish or a diet meal😁 before holidays😆

Ingredients: 3-4 servings

1 - 8 cups mixed spring greens or less..

2 - 2 cup walnuts , toasted

3 - cherry tomatoes few… 6-8 cut into halves 1 green pepper shredded

4 - fire roasted red peppers 2 pieces cut into slices ( from Costco Toronto )

5 - dried cranberries .. 1/2 cup

Dressing :

1 -Modena Balsamic Vinegar 3 tablespoons

( ***gift from my grand-daughter from Italy )

2 - 2-3 tablespoons as desired .. Maple Syrup ( can be substituted by honey )

3 - lemon juice , mustard 1 tablespoon each

4 - toasted sesame some

5- all mixed well , set aside

Steps:

Place greens , tomatoes , red and green peppers , dried cranberries and toasted walnuts in a large bowl , drizzle with prepared dressing , toss well to coat. Season with black pepper and serve immediately.

Paired with chicken drumsticks is just too perfect😎

Very Berry Jelly Summer Dessert

Here’s another summer favorite of the family. It’s easy to make and the super oxidizing properties of the berries are really healthy too!

Fresh berries, whipping  cream , custard power, milk power.

Very Berry Jelly Summer Dessert

Prep time: 15 mins

Cook time: 1 hour 15 mins

Total time: 1 hour 30 mins

Serves: Cold

BBQ ideal dessert Summer Perference

Ingredients

  • Milk 100ml Fresh cream 150 ml milk

  • Castor sugar 40gm custard powder 2Tbs Gelatin powder 2Tbs(melted into 2 Tbs hot water)

  • Assorted berries: strawberries, black berries, raspberries - 1cup

  • 2tsp fine sugar, whipped cream 2 cups

Instructions

  1. Blend the berries with the mixer until smooth.

  2. Stir the milk, fresh cream with 40gm of sugar with low heat until all smooth,add in the gelatin powder,custard powder ,mix well and set aside.

  3. mix step 1and 2 into a creamy paste ,refrigerate for 1 hr after cooling.

  4. whip the light whipped cream with 2 tsp of sugar until stiff, pipe on top of the Sundae, decorate with berries and serve.

Top with cookies or canned red beans is optional 😋

Add extra mango mix , mango berry jelly dessert is done😎

It’s fun to make your own refreshment..

1- wash and sliced the fresh strawberries , add 1 tablespoon icing sugar together with one glass of water and pulse all in a high powdered blender till smooth , then pour on to your summer glasses , chill and set aside

2- on a medium -high speed , whip the whipping cream till stiff peaks , fold the cream gently on serving bowls of chilled strawberries or blended juice glasses , a favorite dessert is done and fun.
