Lo Bak Go~Radish Cake~2025

Radish cake is a classic Chinese dim sum dish , particularly enjoyed during Lunar New Year. It is commonly prepared with daikon radish , dried scallops or dried shrimps , and Chinese sausage and fermented pork-belly. This cake is notable for its fragrance ,not only it is easy to prepare at home , and it is one of my comfort foods during New Year celebrations.

INGREDIENTS:

1-1500 gm (three medium size daikon radish )

…peel more deeply to achieve the highest sweetness of it’s freshness.

* ~cut into medium small strips , no shredded of this 2025 version.

2-Chinese pork sausages , and duck liver sausages about two pieces each , 150 gm fermented pork-belly, cut into thin slices

3-dried scallop soaked and pan-fried .. about 120..150 gm

4- 1 tablespoon white pepper and salt , a piece of raw slab sugar.

5-rice flour 1 package.. 400 gm

6-corn starch , wheat flour 1 measuring cup each    

7- 4 -5 shallots   (cut into small pieces)

8- 1000 ml water ( 500 ml mixed with flour , 500ml from soaked scallops and cooked radish water.

Steps:

1- soak the Chinese sausages , fermented pork-belly into hot water about 5-8 minutes , so as to remove the greasiness , and peel off the sausages skin..

2- drain , and slice the sausages into halves , shredded into small pieces.

3- hot oil hot pan, saute’ chopped shallot with 3 tablespoon cooking oil till fragrant ..add prepared pan-fried scallops , sliced meats , stirring well and dish up.

4- sieve all flour together , add 500ml of water ; mix all well, set aside.

5- peel the radish , cut into mediu thin strips , set aside.

6- cook the radish strips with 500 ml water about 8-10 minutes , add salt to taste ( around..1-1/2 table spoon ) , sugar and white pepper accordingly , plus 1 table spoon of chicken broth powder as desired.

7- add stir-fried meat and scallops onto the flour batter , mix well and set aside.

8- pour one third of the radish batter onto the bowl of the flour and fillings batter, mix well.

9- pour the rest of the radish water quickly onto the flour batter.. mix thoroughly.

10- oiled the ready containers and pour the batter accordingly with tin foil covered before ready to steam on a steamer with boiling water .

11- steam about 40-45 minutes , carefully check with a skewer to make sure it is done. ( place the skewer into the middle of the pan , if it comes out clean then it is done.)

12- put the pan upside down for cooling , this is my way for easy demolding .

13- after remove out from the pan , slices it and serve hot or…

14- cubed and panfry all sides before serving.

*Noted: it is always more easily to slice and panfry with square containers.
