Banana Soft Cake @Rosacooks
It is the best time making banana cake or bread if there is one or more overly ripe bananas on your kitchen table , personally I prefer soft and fluffy banana cake more than banana bread. The recipe sharing here is super soft and moist . It is light with the right amount of sweetness , packed with full banana flavor and can be served as dessert , family cake on Sunday morning or more and more as you wish…Let’s go and share …

A: 2 ripe banana ( slice , add milk 100 ml and blend even into smooth batter by hand or blender )


B:5 egg yolk +Caster sugar 1/3 cup
* Whisk egg yolk and sugar together till smooth , then add to A, blend even .

C: corn flour 1/3 cup + self raising cake 1/2 cup sieved together ...
sift above flour into egg batter bit by bit,fold gently*
A+B +C ... Egg batter

D: 6 egg white + 1/4 cup castor sugar
whip egg white (add a dash of salt) with castor sugar until soft peak and fold 1/3 to the egg batter and blend even.Fold the rest egg white with the egg batter , again gently mix well, no over mixing. *
Pour into 7 in cake tin lined with parchment paper ,then bang bang (tap) the tin so as to release air bubbles before bake.

Baked in preheated oven
300 F .....bake 90 mins with water bath method .
* turn the oven to 250 F and open the door of the oven slightly with a wooden spoon at the end of the baking for 15 mins ..This is for cake to cool a bit before take out from oven , preventing a sudden change of temperature 🤒
Cool on a rack before cut and serve.

***Water bath method is put the baking pan inside another bigger pan filled with boiling water in the oven
