Old style Chinese Cake
Ingredients: cake flour 1 cup corn flour 1/4 cup
Eggs-8 large.. (separate egg white/ yolk ) set aside with 2 different bowls
Sugar 80-100gm fresh milk100 ml
Corn oil or grape seed oil-1/4 cup
Espresso coffee powder - 1/4 cup ( optional )
Steps:
1: sieve cake and corn flour , and coffee powder (optional ) all together2-3 times and preheat oven 300 F
2: on a stove heat pan , add oil , heat around 70 C ,then turn off the heat ,add seived flour, whisk evenly . Add sugar (80gm) and milk, egg yolk and combined well. Set aside.
3: whip egg white (add a dash of salt) with (20gm)castor sugar until stiff and shining, then mix 1/3 to the egg batter and blend even. Finishing the rest egg white with the batter , again gently mix well. No over whisking.
4: pour batter into the baking tin , ( 20x 20 cm ..tin surround all corners with baking paper as shown ) and bake300 F 60-75 mins with water bath method.
5: take the tin out carefully , immediately drop the tin on the table lightly few times to avoid contraction , then take off the paper around the cake ,cut and serve hot is good. No need to cool before cut. Enjoy.
