Blueberry Mango Puff
Ingredients for pastry~
serving...18-20 puffs
1-soft unsalted butter 1/2 cup (55-60gm)
2-water 1+1/2 cup
3-all purpose flour 1cup. Salt 1/2 tea spoon. Sugar. 1 tablespoon
(sieve all together, set aside)
4- 4 eggs beaten

Filling~
1- Blueberry jam some ,white sugar. 1 tbsp
2- whipping cream. 200 ml
3-one mango. Peel and slice, blended (purée)
4- icing sugar. Some for garnish
Steps~
Preparation time....15-20 minutes
Baking time......30-35 minutes
A:
1- Preheat oven to 400 F
2- melt butter and mix with water in a saucepan over medium heat
3- bring to boil,and add flour all at once ..
4-remove from heat and stir immediately with a wooden spoon until mixture smooth, pour onto a bowl and set cool.
5- Gradually add beaten eggs ,stir by hand or mix with a mixer until the batter is smooth .
6- place the mixture in a piping bag and pipe onto the baking tray , or spoon onto a baking tray lined with a silicone sheet or parchment paper.
7- pipe or shape the batter about 3” apart.
8- Bake 15 minutes with 400F for 15 minutes,then turn to 350 F and bake for 20 mins more. Turn off oven and rest 5 mins before take out from the oven,set aside.

B~filling steps..
1-Whisking the whipping cream with mixer, add sugars and mix until stiff...
2- peel and shredded mango ,add onto the mixing cream and mix well, place it inside the fridge, set aside.
C~
1- slightly apply jam onto one side of the cut pastry evenly ,and pipe the other side with the mango fresh cream , dust with icing sugar. Done.
Tips~ Do not open the oven while baking.


Top with cherry and custard cream is a good option too.
