Durian Cheesecake

Named durian cheesecake means it is a cheesecake made with durian . King of fruits of its creamy custard-like rich texture , here this durian cheesecake is another way to enjoy besides eating it alone. As a durian lover plus my baking passion this is one of my favorite dessert for gathering or as a homemade gift for friends who are durian lovers too. It is just too perfectly creamy and simple to share with you here..

Hi , all durian fans durian cheese cake is coming …

Ingredients…

A: cream cheese-250gm unsalted butter (melted) 40gm

(Double boiler method to whisk all into smooth batter )

B: milk 100 ml Durian purée 150 gm mix it well and sieve

Whisk 6 egg yolk one by one to the milk batter well , then add to A .

Blend A&B even

*No sugar added at this recipe here as durian is high in sugar , so adding sugar is a personal preference)

C: corn flour 40 gm + cake flour 50 gm sieved well together ...

sift above flour into egg batter bit by bit, fold gently*

*never over mixing *

A+B +C ..= Egg batter ..yellow team

D: 6 egg white + 1/3 cup castor sugar (we need sugar here)

whip egg white (add a dash of salt) with castor sugar until soft peak and fold 1/3 to the egg batter and blend even gently

Fold the rest egg white with the egg batter , again gently mix well, no over folding

Pour into 7 in cake tin lined with parchment paper ,then bang bang (tap) the tin so as to release air bubbles before bake.

E:

Baked in preheated oven

Bake the cake 300 F without the fan function at the lower rack

Bake 75 …90 mins with water bath method .

*(keep checking and eye on the cake when it is close to the end )

*Water bath method….

Wrap the base your cake tin in foil and place it in a larger pan , again place a bigger deep pan filled with water. This step ensures the cheesecake does not have any cracks as it bakes , the water bath method in other words simply made to keep the interior of your oven moist.

* Open the door of the oven slightly with a wooden spoon at the end of the baking for 10mins ..This is to ensure no sudden change of temperature before removing it out of oven.

Once out of the oven , let it rest at room temperature for another 10 mins before place on your favorite plate.

* Best serve chilled
