HOMEMADE TOMATO SOUP

Ingredients – ( 6-8 serving )

1: 1 +half pounds farmer tomatoes cherry tomatoes 1 small package ( cut into half) , 1 onion few shallots 1 whole garlic few basil leaves
2: half cup 1/2 lime ( optional)
3: sugar ,salt to taste butter( optional) table cream
Steps ~
1: steep tomatoes in boiling water for few mins.. then…soak for 14-30 mins , drain and set aside
2: peel and dice farmer tomatoes , dash with salt and olive oil , together with cherry tomatoes bake 350 F for 10 mins , set aside.
3: slice or mince onion, shallots and garlics , set aside
4: big hot deep pot ,add bit of olive oil and sauté onion, garlics and shallots until fragrant, put all tomatoes together and basil leaves , again mix well.
5: pour 3/4 full pot of water into all above, stir well until boil, turn into medium heat for 18-20 mins.
6: carefully use a Hand Blender to blend all until smooth and soupy .
7: add 1 tbsp of butter( optional), 1/2 lime juice ( again optional) sugar and salt to taste.

Final mix and serve with table cream.
