AVOCADO TUNA SALAD@ ROSACOOKS
A SUPER EASY COMFORT FOOD THAT I ALMOST MAKE ONCE A WEEK , A BIT HERE AND THERE AND BEST OF ALL
ITโS DELICIOUS AND HEALTHY AS WE ALL KNOW AVOCADO IS GROUP UNDER SUPER FOOD, RIGHT ?
INGREDIENTS:
1 โ 1 can of flaked or solid white tuna โฆ * whatever inside my cupboard ๐
2 โ 1 ripe avocado
3 -2 eggs ( boil and shell , set aside )
4 โ half of a lemon ( juice and set aside )
5 โ 2-3 tbsp yogurt salad dressing (savory dill )โฆ.sure it is much better than mayo !
6 โ 1- 2 tbsp Tabasco ๐ ( optional )
7 โ salt and pepper to taste
8 โ small handful of fresh peppermint ( fresh from my garden ) chopped, about 1/2 cup.
STEPS :
1 โ avocado halved and pitted, scoop and mash it , set aside .
2 โ canned tuna drain, add peppermint , Tabasco and season with salt and pepper..
โ add lemon juice, mix well and set aside.
3 โ diced eggs , mash with yogurt salad dressing , mix well..
4 โ put everything together inside a big bowl, stir and taste until all well mixed ,
-save inside a glass container with cover , and place it inside the fridge before serve.
โ serve on bread and wrap, top on salad or whatever you like.., eat plain ?
5 โ I usually make a small portion every time as to score freshness, any way itโs easy , right ?
