Sweet and Sour Trotters @Rosacooks

This is a sweet and sour trotter as the name of the dish suggested, so it is definitely with the full taste of sweet and sour or aroma effect , but I used to cook my pork Trotter with red bean curd , spicy powder and dark soy source .however , a second choice of cooking it with black garlic vinegar and osmanthus syrup are full of flavor too. Why not ?


Ingredients: 1 big Trotter ..2 lbs( 800-900 g)
Mixed Sweet and sour perverted vegetable as shown.
Black garlic vinegar 1 cup
Water..1500ml
Osmanthus syrups 1/3 cup
Salt to taste ( sprinkle 1 tbsp of salt after wash and drain over the Trotter chunks , a bit pepper as well )
Steps..
1: scrape skin of pigs trotters with a sharp knife , wash and a quick blanch to remove the bubbles and smell .
2: chopped trotters into big chunks ,blanch again with vinegar for one minute and drain i, rinse in running cool water for 1 minute..drain and pat dry , set aside.
3: heat oil in a pot ,add ginger and garlic and stir fry till fragrant
4: Add trotter chunks onto the pot , stir fry one..two minutes with medium heat till brown and briskly, add vinegar , and water , bring to boil then slimmer with medium low heat for 45 mins.
5: Add osmanthus syrup , sweet and sour shedded veggies to the pot , and slimmer for another 10 mins, adjust seasoning with more sugar and salt to taste accordingly. Dish up .
Serve hot and enjoy.
