Penang Char Kwai Teow 2023~
Without smoky and charred flavor, it is not an approval Penang Char Kwai Teow.
βWok Heiβ and full preparation of all ingredients ready-by the side , it is possible for home version with the right cooking technique to achieve. The main tips here is not over stir the food , preheat the wok to reach a very high heat , pour the right amount of cooking oil , then you are ready to goβ¦
Ingredients
1~ a package fresh flat rice noodles.
2~clam meats or shrimps or both
3~ Beansprouts (best to trim the both ends nicely.)
4~ sweet soy sauce and fish sauce 1 table sp each and mix well before cook
5~ Chinese sausageβ¦ one sausage is fine as I donβt like too much fillings over the the noodles(my own styleπ)
6~ chili sauce optional, I prefer using my own home-made Xo chili sauce
7~ as usual , I like put in Chinese chives and spring onion to add more flavor to the dish
Stepsβ¦
1~ loosen the flat noodles by hand and warm them up in the microwave one minute before cooking
2~ stir fry the clam meats ( dash pepper before cook)on a heated wok
and sliced sausage for about 1 minutes ,add garlic and Xo sauce to stir for another 10 seconds, dish up and set aside.
3~stir fry bean-sprouts 30 seconds , again dish up and set aside
4~use the same wok and heat over high heat, add 1 table spoon cooking oil , then put the loosen flat noodles onto the wok , toss and flap the noodle gently , add ready mixed sauce and stirred clam meats and sausages, gently toss the mixture for 30 seconds.
5~ push the mixture to the side , add a bit extra oil (1 tbsp..) and the beaten duck eggs on the edge of the wok, leave undisturbed for about 30 seconds again .
6~ Gently toss all mixture for 10 seconds , then undisturbed again till it reaches the desired char redness and fragrant , dash the prepared shredded spring onion , carefully dish up and place on a plate , done and enjoy.π
