Pot RICE WITH salted fish & chicken slices
Simple Ingredients..
1: Chinese salted fish - 2- 3 small pieces as desired few shredded ginger & garlic cloves
2: special homemade Chinese sauce (1 tbsp black and sweet soy sauce mix with oil )
3:skinese chicken 250-300 gm… wash , drain , slice into pieces , marinate with salt , pepper and corn starch 1 tea spoon each , set aside.
4: 2- 3 cups of white rice as desired
Steps:
Soak salted fish with boiling water for 1 min, so as to rinse off the excess salt and smell
a- panfry the salted fish onto the heated wok with 2 table spoon of oil and shredded ginger/ garlic , dish up, set aside .
b- add chicken slices onto the oil heated wok , and saute’ until mostly cooked…dish up and set aside .
c- Cook rice with clay or iron pot, till almost cooked but still with bubbles….
( Note: 1-1-2 proportion of rice and water )
d- Top rice with pan-fried salted fish and chicken slices , till cooked (about 3-5 mins more)
e- Rice is cooked, meat is also ready…Rest 1-2 mins
f- pour Chinese pot soy sauce all over the rice, done and serve.
g- Serve with the pot and dish up with a plate and rice bowl , enjoy 😋
