RICE CASSEROLE WITH PORK LOIN AND SALTED FISH~
INGREDIENTS….
Pork loin 200-250 g salted fish 2 pieces
Rice 3 cups bit of shredded ginger, 1 clove of garlic (dice)
SEASONING:
1 tbsp dark soy, 1 tbsp light soy, 1 tbsp sugar, 1 tbsp sesame oil,
( mix the seasoning evenly in a small bowl
STEPS:
Marinade pork loin – 1 tbsp light soy, 1 tsp sugar ,1 tsp wine, 1 tsp cornflour a pinch of pepper
1 tbsp of water, 1 tbsp of corn oil to be added last, then blend evenly
Wash and drain the rice then mix with of salt and oil (1/2 tsp salt,1 tsp of oil) for 15- 20 mins
Pan fried salted fish both sides 1 min ,dish up.
Add cold water into the pot with the rice,and cook over low heat for 15 mins…
(3 cups of rice add 4 cups of water approximately)
Hot pan hot oil saute pork loin until mostly cooked…dish up
when the water in the pot almost dries up….
Layer the pork loin and salted fish on top of the rice, cook 3-5 mins more..
Turn off the heat and leave the pot on the stove for 10 mins…
Remove the lip, take out the salted fish…
THEN……..
Add in the seasoning over the rice before serving ,done and enjoy. Serve with the pot…plate…and bowl
