Ingredients:
A - Pandan juice - 10 pieces of fresh or frozen pandan leaves cut into pieces , pop in a blender with 1 cup of water , process as juice ,drain and filter . Save 50 ml set aside.
B - 50 ml of fresh pandan juice add in 50 ml of fresh milk , set aside as pandan juice.
C - cake flour 1 cup + corn flour 1/4 cup
eggs-5 large..6 small (separate egg white/ yolk )
D - Caster Sugar 80gm ( save 20 gm to whip with egg white )
Corn oil -1/4 cup
Steps---
1: sieve cake and corn-flour , all together2-3 times and preheat oven-300 f
2: whisk sugar (60gm) and egg yolks with a balloon whisk , add pandan juice mix and mix well , then add sieve flour bit by bit , combined well .
3: whip egg white (add a dash of salt) with (20gm) caster sugar until stiff and shining, then mix 1/3 to the egg batter and blend even. Finishing the rest egg white with the batter , again gently mix well.
4: pour into the prepared clean non-greasy baking pan (8 inches ) bake 300F ,45-50 mins with water bath method.
*** After 45 minutes, put a bamboo skewer in the middle of the cake , come out clean..it is done
5: take out and turn the pan upside down , cool at least 3 hrs before demold
A water bath method is just a bigger pan of hot water place inside the oven , then put the baking pan that contains the food you need to cook into it
