Hot and Sour Fish head Mei Fun Soup~ Asian Style
Ingredients : ( 3-4 serving )
1: 1 Salmon Fish head ( Dice, clean, drain and dry)
2: Mei Fun 300g ( 1/2 package of instant dry Mei Fun , soak, drain , set aside)
3: 1 tbsp instant hot and sour paste , Curry Laksa paste 100g ,water 1500ml
4: some diced garlic, shredded spring onion , few coriander and 1 lemon sliced
Steps~
preparation .. 10 minutes
cooking time.. 15-20 minutes
1: dry fish head with paper towel, season with fish sauce(2tbsp),corn starch, and pepper 1 tbsp each for 5 mins
2: dust fish head with corn flour before put onto a hot pan , add 2 tbsp cooking oil with diced garlic , and fry fish head both sides with medium heat till fragrant , dish up and set aside
3: put soaked Mei Fun onto a serving bowl, add soy sauce and sesame oil to taste, , warm up with microwave 1/2 min, dish up and set aside .
4: add fried fish head into soup, and boil 3 mins with medium heat.
5: top the mei fun bowl with fried fish head, pour the hot soup over, add lemon juice to taste, sprinkle spring onion, coriander , and serve hot.
Note : A hot and sour tasty seafood soup is popular in Asia, some with coconut milk added while some others not, personal preference .
