Korean Seafood Pancake
This is a great easy dish with everything on hand easy , all you need is a package of frozen seafood from Korean supermarket .. spring onion or chives inside your fridge , nice and easy right ? I developed my own recipe with easy ingredients so it is one of my favorites on a lazy afternoon or any days after I watched the Korean tv drama , an ideal fast appetizer or side dish I usually enjoy .
Ingredients ~ two 8 inches servings
All purpose flourโฆ. 1 cup
Glutinous Rice flourโฆ1/3 cup
One whole egg..or two( for extra topping on the pancake*** optional )
1 package of frozen seafood .. ( or choose your own seafood selection as desired )
A handful of shredded green , red and yellow peppers, chives or spring onion
Fish sauce , salt and pepper to taste
Steps ~
1: Dash salt on the prepared seafood for 5-10 minutes , rinse , drain and dry, set aside.
(* salt added for easier to get rib of excess water from the seafood )
2: Dust with 3 tablespoons flour all over the prepared vegetable after cut and shredded .
3: Combine all flour , add 1 teaspoon of fish sauce, 1/2 teaspoon salt and pepper , one beaten egg , whisk well with one cup of water to form a batter. Rest 5-10 minutes
4: Add the seafood to the batter in a bowl , mix well and set aside.
5: heat 3 tablespoons of oil in a nonstick skillet over medium high heat, pour half of the seafood batter onto the pan , spread the flour coated veggies on top of the batter onto the pan again , and fry 5 mins , add extra 2 tablespoons of oil along the edges of the pan, cover with the lid and turn heat to medium , cook for 5 mins more โฆ
6: turn off the heat and use a big plate on top of the pan , flap the pancake over , then place it back onto pan .
7: Panfry the other side for another 5 -8 mins till fragrant and crispy.
8: Transfer to a serving plate , serve as a whole plate or cut the pancake into pieces for servings.
***Dip with soy & vinegar or chili sauce as desired๐
*** Add extra one beaten egg on top of the batter before flap over as desired , more eggy taste๐
Dipping sauce ~
put sweet soy sauce , vinegar , chopped green onion and toasted sesame seeds in a small bowl.. set aside , and mix it before serve
