1: all purpose flour 500 gm
2: 1 whole egg
3: 100 ml water+ 150 ml milk , mix together
4: baking power 1+ 1/2 teaspoon Baking soda 1 teaspoon
5: salt 1 teaspoon.
6: oil for frying & 2 tablespoons oil for batter
Steps ~
1: mixing all dry ingredients in a large bowl..flour, baking powder , baking soda..salt
2: add one egg , 2 tablespoons of oil on the bowl and combine well.
3: slowly add the water and milk mixture onto the batter, use a chopstick to stir gently between each addition.
4: knead for 1-2 minutes ( then cover with cling film for rest )
5: rest for 20 minutes.(first time )
6:knead for 1 mins.. rest for 20 minutes (second time ).. same procedure
7:knead for 1 min.. rest for 20 mins ( third time)
8: Knead for 1 min.. then wrap the dough with clingfilm ,
place the dough inside fridge for chill 3-6 hours or overnight.
9: take out the dough and rest at room temperature for 1 hour before next steps…( it is the tips for puff up as desired)
10:place some flour on the working table and on hands too…😎
11: take out the dough and pull the dough in a long shape , and roll flatten
12: Lightly dust the top of the dough with flour , and cut each rectangle crosswise into even strips
13: lay one strip of dough on top of another , dip the chopstick with water and press in the center of the dough to stick them firmly.
14: Heating the deep - frying pan with oil to 190 C / 375 F ..
15: gently stretch the dough and carefully lower it into the pan , turn the heat to low for easy frying , ***no over burn for sure😁
16: use chopstick to roll it around for even frying with all sides till evenly golden. Transfer it to plate lined with kitchen paper to soak up excess oil.
17: Repeat the frying steps of the rest one by one , more secure and fry well I guess , my usual style😎
