Seafood Risotto ~easy and simple version
Seafood Risotto is easy to make with endlessly customizable, my simple recipe here is only prepared whatever I crave for cooking , I have leek , package of frozen seafood , butter for sure to sautéed the rices with fragrant brown, and that’s all. No special salty water , heavy sauce , or lemon juice and white wine but Sake instead , this is a quicker version than a classic risotto , an easy dish with my own preference.
Ingredients~ 2-3 servings
1 - Arborio rice … 2+1/2 cups
2 -Korean frozen seafood one package…300 gm ( soaked with dash salt for 20 mins before wash and drain )
3 - organic chicken broth one box….900ml
4 - leek , garlic .. some chopped
5 - butter 3 tablespoons , fish sauce , tabasco , salt and pepper to taste
Steps~
prep time… 20-30 mins
cook time .. 30-40 mins
1 - soak the rice in water for 30 minutes , drain and set aside
*** I prefer more easy cooking and less crunchy , so I soaked the rice before cooking 😆
2 - dash pepper ,cornstarch and olive oil all over the drained frozen seafood before cooking
3 - leek , garlic chopped and set-aside
4 - melt 3 tablespoons of butter in a large pan over medium heat , add garlic
and the rice and cook , stirring constantly till it is fragrant and toasted
5 - add partly chicken broth and continue to cook , stirring frequently until it is absorbed
6 - continue adding the broth to cook , about 1/2 cup at a time , stirring constantly till each addition is almost absorbed.
7 - when the rice reach your taste , season salt and pepper to taste , then dish up on prepared serving plates..
8 - sautee the prepared seafood with garlic and leek , dash with fish sauce as desired , add extra 3 tablespoons of broth and Sake till fragrant and thicken , top on the serving plate , dash with fresh thyme , tabasco as desired.
***I don ‘t add in lemon juice here , just dash with tabasco is fine with me.
