Yellow Eel on clay pot rice@Rosacooks

Ingredients …

1 frozen package yellow eel chunks ( 400 gm )

2: some garlic , shallots, minced. ( 3 cloves of garlic , 3-4 small shallots)

3: 2 pieces of tangerine peel, soaked and shredded. 1 knob ginger shredded , 2 stalks of green onions chopped, set aside.

4: soy sauce , dark soy sauce and sesame oil 1 tablespoon each , mix and set aside as condiments

Frozen yellow eels chunks , thaw and drain...

A…Preparation…

1: Thaw the frozen eel , rinse with salt water thoroughly and drain.

2: add 1 tbsp of kitchen wine , 1/4 tsp salt , dash of white pepper and marinade the eel chunks for 15 minutes.

3: mix 1 tbsp of soy sauce , dark soy sauce and sesame oil , set aside as condiments

B… Stir- fried eels

1: heat the wok , add 2 tbsp cooking oil and sauté shredded garlic , ginger , tangerine peel and shallots till fragrant ..

2: add eel chunks onto the fragrant fried garlic and ginger , then quickly mix well with condiments , dish up and set aside.

C..cooking Rice

1: soak rice in water for at least 45- 60 minutes , strain and set aside

2: Brush clay pot with oil , add 1.5 cups water together with the soaked and strain 3 cups of rice on to the claypot , turn medium heat and cook about 8 minutes till water almost drying up…

3: place the stir-fried eel onto the rice , turn low heat , dash oil on top of it , and cook for 5 minutes, then turn off the heat and rest 3-5 minutes more.

4: Sprinkle on spring onion and drizzle sweet soy sauce as desired.

Done and serve hot.
