French Onion Soup

“I am giving you my recipe as I learned it from my mother” (Paulette Farah )

Ingredients:

3 or 4 large onions
3 tbsp oil
2 tbsp butter
1 tbsp flour
4 cloves of garlic
1 bay leave (optional)
1 tea spoon dry thyme
1 1/2 or 2 liters water
3 beef bouillon tablets

pepper to taste
I do not add salt as beef tablets and cheese are salty enough
10 or 12 slices of baguette bread toasted under the broil
***American asiago cheese or Swiss gruyere or emmenthal grated Quantity is up to you whether you like lots of cheese or little.

Steps:

Peel and slice onions

Put oil and butter in a large frying pan.

Brown onions to a nice color. Add the flour. Stir .

Add water , bring to a boil, add beef bouillon tablets.

Add garlic, thyme , bay leave. Let cook for about 20 minutes.. 

Meanwhile toast bread slices, grate cheese.
When it is cooked, place a few slices of bread in a soup plate oven proof.

Sprinkle/spread grated cheese over bread. Soak with onion soup.

Sprinkle more cheese and place under the broil until nicely browned (or just melted, to your taste.

Grind some pepper over the plate
